… Lemongrass
A pinch of spice
Lemongrass is tangy, refreshing, and robust. It carries strong tones of citrusy lemon and slight hints of mint. It is often a feature of Southeast Asian cuisines and used alongside other strong flavours like ginger or chilli. Lemongrass can both balance the other strong flavours and hold its own with it’s refreshing lemony zing. At Christmas, in Southeast Asia, known for being a ‘foodies paradise’, all the flavours come into play. Celebration feasts include a variety of different dishes. Sometimes these include a nod to colonial traditions, but mostly what’s on the menu is a selection of the best dishes the various local cuisines and cultures offer. Many of these dishes will also appear around the world as people gather for Christmas celebrations. Lemongrass can be used in both sweet and savoury dishes to bring that bright, refreshing taste to meats, vegetables and even desserts.
